International Street Food Challenge with Travel Supermarket‏ | QueenBeady

Travel Supermarket Paella 2Edit

Back in August I was invited to the International Street Food Challenge with Travel Supermarket‏, but sadly due to work commitments and my then upcoming holiday to Mexico, I couldn’t get my butt down to Shoreditch for this amazing event. I was super sad because it combined my love for all things travel and also some scrumptious food from street style vendors too. A whopping fifth of Brits decide on their holiday destination all down to the cuisine that is offered at the hotel or resort. That’s a staggering amount so it’s plain to see why local’s want to make sure that their food is up to scratch! Luckily, because I couldn’t head down Travel Supermarket wanted me to try and create one of the dishes that was on offer at the event.

There’s nothing more I enjoy when travelling than trying out the local cuisine. I feel it completely enriches your experience and can enhance your visit. I certainly don’t go away to eat burgers and chips every day when there is so much vast choice on offer in foreign countries.

There were a few options to choose from, such as Mutton Kothu Roti Recipe from Sri Lanka to Tortelloni Spinach & Ricotta Served With Pesto Sauce inspired by Italy. However, with my holiday to Mexico seeming like a distant memory (you can read about my trip here & here!) I decided that I would create my favourite dish of Paella as a little nod to the Spanish colonized country. I’ve practised this a couple of times so to be quite honest, I know what works for our palette, adding little bits here and there! It’s a really easy dish to make. Armed with some waitrose vouchers off I went!

Ingredients
350g Chicken
100g Chorizo
10 King Prawns
300g Paella Rice
2 Stock Cubes
600g Boiling Water
1 Onion
1 Clove of Garlic
1 Red Pepper
100g Petit Pois
Smoked Paprika
Black Pepper

The recipe is pretty simple. I break mine down in to steps.

Recipe
Chop your onions and crush the garlic and add to the hot oil in the pan to brown. Once done, add your chopped up chicken & chorizo, then cook until fully done.
Now add a good sprinkling of smoke paprika. Next add your paella rice and cook this till it becomes translucent, this is when you need to add your boiling water and stock.
Leave the pan to simmer for ten minutes, you do not need to stir at this point.
Once the ten minutes is up add the prawns, petit pois and chopped up pepper. This is where you need to keep stirring as the water will have now evaporate so you don’t want your rice to burn and stick to the pan, do this for another ten minutes.
Then voila, you are done! Serve it up in a big bowl and enjoy!
