THE 60 SECOND CASTELLO CHEESE RECIPE THAT WILL BLOW YOUR MIND – ad

I am no self-confessed whizz in the kitchen or a glamorous baker who can bake a cake at the click of a finger. Oh no. But I am a serious lover of food and this is something I can’t deny. My weakness is cheese so when I was given the opportunity to throw something together in the kitchen with Castello cheese I gladly obliged. And, if you’re not the world’s best cook or a dab-hand in the kitchen and you need something to delight your guests (or just your own) taste buds, this is the 60 second Castello cheese recipe that will blow your mind.
Firstly, I used Castello’s Find Your Flavour taste test to decipher exactly what my very own taste buds like and enjoy! Of course, it came as no surprise that I got salty dishes, as well as cheesy and sour. I linked it to my Facebook profile, so it can store all the great recipes based on my very own taste test.
With Easter coming up, this seemed like a great opportunity to create a special dish using one of these recipes. Castello cheese can be bought at most large, major supermarkets so I picked up a 125g pack of ‘Danish Blue’ which is described as having a salty, sharp and bold flavour – a perfect match for my results from the taste test.
After browsing the different recipes, I came across this super simple recipe that would be fit for a tasty Hors d’oeuvre, a starter or even a dessert for Easter. A multi-functional dish at it’s very best which made it all the more satisfying to create. The Pastrami Crackers with Blue Cheese is the perfect plate to serve up during a special occasion such as Easter.
So, how do you make it?
Ingredients
12 crackers
1 radicchio (or red leaves from a bag of mixed salad)
1 Castello® Traditional Danish Blue Cheese
12 slices Bresaola
100-150g of red grapes, cut in half
Red basil (can be replaced with basil)
Pastrami Crackers with Blue Cheese
1. Roll up your mixed leaf or radicchio with a slice of bresaola
2. Place on top of the cracker of your choice
3. Cut up small pieces of the Castello® Danish Blue and place on top of the crackers with half a red grape
4. Finish with your basil leaf.
Didn’t I promise you that it really was that simple and it would only take 60 seconds to create?! And, after constructing this pile of goodness it would only be right to have a taste test to make sure that it lived up to my palette’s expectations. Now, I’m not adverse to a cheese platter for dessert, but I’ve never actually tried cheese with a grape (shock, horror!) I know, it seems absurd for someone who professes to love cheese as much as I do but give me a chance.
The combination of the salty cheese and meat against the sweet red grape and fragrant basil, the whole concoction just…worked. I devoured each cracker stack and with each morsel it tasted better and better. I feel like I’ve cottoned on to something that I’ve been missing out on for a long time.
I’ll definitely be making more of these and they might just be my new party trick!
